Beans Cooked With Ham Hocks

The ham is located at the level of the pork legs, either in the front part between the shoulder and the foot or in the lower part between the ham and the foot.   It is a boneless piece that offers consumers a meat that has a gelatinous texture and is somewhat tasty.

* Ingredients :

° 1 pork knuckle
° 200 grams of coconut kernels
° 4 sweet potatoes
° 150 grams butter
° One or two sprigs of thyme

* Preparation :

 soak beans day before overnight.
Rinse and cook in a covered pressure cooker for 30 minutes over medium heat, checking with the tip of a knife that they are done!
Remove the water from it and set it aside in a bowl.
While the peeled beans are cooking, wash the onions and potatoes.
Set the potatoes aside.
Roast the shank in melted butter in your robotic cooker.
Keep it, put your onions to return it, then it should take a nice golden color, it is important because they are the ones that will give the beautiful brown color to the cooking juice.  
Add your beans to color it in, too.
Mix them often with the onions using a large spoon.
Remove from heat, put the leg on the vegetables, season with salt and pepper, add the thyme and cover everything with water a little more than high.
Close the pressure cooker and cook for 25 minutes of pressure.
Open the casserole dish, add the potatoes, and cook fully for another 15 minutes.
Before serving, remove the leg, put it in a baking dish and roast at 240 ° C for 5 to 10 minutes.
Dress up and enjoy this hot dish for a winter lunch.
