*Strawberry Crunch Cheesecake Cones*!!!


* Ingredients (4 people) :


° 60 grams butter

° 30 g flour (I added 1 tablespoon of flour)

° 100 grams of fine sugar

° 5 cl of strawberry juice

° 6 cl of rose syrup

° 30 cl of whole liquid cream

+For the entire recipe (juice, coulis, garnish)

° 1 little sugar

° 1 little lemon juice

° 600 gm strawberry

First of all, you need to make a shape for the cones. I used a 21-29 card that I rolled up to get a cone shape, tape attached and covered with aluminum foil so you can reuse the cones later, you'll just have to change the 'alu. 


Make strawberry smoothie by blending a few strawberries and passing this choleric through a fine strainer.

Preheat the oven to a rotation temperature of 180 degrees. to melt the butter.

In a bowl, mix the flour with the sugar, then add the strawberry juice and finally the melted butter.

Lay small piles on a silicone or non-stick baking tray, spread them with the back of a damp spoon and place in the oven for a few minutes. Supervision is necessary and once all the tiles are cooked (be careful that they keep their pink color) take the dish out of the oven and let it cool for a few moments.

When the tile is still hot but not hot, tape it to the cone.

Whip the very cold cream into the whipped cream and gradually add the rose syrup while continuing to whisk. Reserve in the refrigerator.

If you have a siphon, you can do it with it, but the siphonic whipped cream falls off very quickly.

Mix a few strawberries, add a little lemon juice and sugar to your taste. I would still advise not to sweeten too much to keep a little acidity that contrasts with the sweetness of the rose whipped cream.

It remains only to prepare the dishes, this should be done at the last moment so that the cones retain their fragility.

Put a few strawberries in the cones and whipped cream on top with a siphon or piping bag. Garnish with some strawberries and a little coulis.I added few mint leaves for decoration.
