*Broccoli-Cheese-Balls*



*Ingredients

°1 1/2 heaped c fresh broccoli florets
°1 c Colby cheese
°1 c cheddar cheese
°4 oz Velveeta, cutting to pieces
°1/2 tsp crush red pepper flakes
°2 1/4 c panko breadcrumbs, divided
°1 egg,
°1/2 c all-purpose flour
°2 egg
°Vegetable 

*Methods 

Steam the broccoli until slightly softened. Let cool.
Finely chop the broccoli. You want the pieces to be 1/4 inch or less. Place in a large bowl.
Adding cheese, red pepper flakes, 1/4 c Panko breadcrumbs also 1 egg to bowl with broccoli. Blending well.
Using your hands to shape  mixture to balls using about  rounded tsp for every ball. You should get 12-14.
Placing balls on a plate also refrigerate for at least 30 mn.
Putting flour in a bowl.
Placing 2 lightly beaten eggs in second bowl & blend with 1 tsp of water.
Placing rest 2 cups of Panko breadcrumbs in  third bowl.
Pour for 2 inches of oil to a Dutch oven or heavy pot. Heat oil 375 degrees. For great results, use  thermometer.
Removing broccoli balls from fridge, coat in flour, dip in egg mix, & coat in panko breadcrumbs.
Frying for 4 balls at a time to golden brown on all sides.
Drain on a plate lined with paper towel.
