Avocado, Mozzarella, and Tomato Grilled Cheese

*Ingredients :

°½ avocado (sliced)
°4 slices of mozzarella
°4 cherry tomatoes (halved)
°2 slices of multigrain bread (I like Ezekiel sprouted grain bread)
°a knob of butter

*Method *:

Butter the outer layers of the bread. Place one slice, buttered side down, in a skillet over medium heat. Layer the cheese, the tomato and then the avocado.
Place the other slice of bread on top - butter side up. Flip after a few minutes. Cook each side until golden on the outside and gooey on the inside.
