Baked Sweet and Sour Chicken


°4 boneless, skinless chicken breasts, cut into 1″ pieces
°1 cup cornstarch
°2 large eggs
°1/4 cup vegetable oil
°1/2 cup granulated sugar
°1/4 cup ketchup
°1/2 cup apple cider vinegar
°2 tbsp. soya sauce
°1 C. garlic powder
°1/2 tsp.  sea ​​salt


Preheat oven to 325F and line a 13 x 9 inch pan with parchment paper.
Put aside. Seasoning chicken breasts with salt & pepper.
Add the cornstarch to a large ziploc bag and add the chicken breast. Shake to coat.
In shallow bowl, beat eggs. Heat oil in skillet on medium-high heat to it sizzles.
Dip the chicken breasts in the eggs and add to the skillet. Sear chicken until browned and place in prepared dish.
In a medium bowl, combine sugar, ketchup, vinegar, soy sauce, garlic powder and sea salt and whisk.
Pour over chicken and bake for 1 hour, stirring halfway through cooking.
Serve with rice.
