Stuffed Avocado's


°4 ripe avocados
°Juice of 1 lime
°1 tbsp. extra virgin olive oil
°1 medium onion, chopped
°1 lb ground beef
°1 packet taco seasoning
°Kosher salt
°Freshly ground black pepper
°2/3 tsp. grated mexican cheese
°1/2 tsp. shredded lettuce
°1/2 tsp. quartered grape tomatoes
°Sour cream, for garnish


Cut the avocados in half and pit them. Using a spoon, scoop out some of the avocado to create a larger well. Dice removed avocado and set aside for later use. Squeeze the lime juice over all the avocados (to prevent them from browning!).
In  skillet over heat, heat the oil. Add the onion and cook until soft, about 5 minutes. Add the ground beef and taco seasoning, breaking up the meat with a wooden spoon. Season with salt and pepper and cook until the beef is no longer pink, about 6 minutes. Remove from the heat and drain the fat.
Fill each avocado half with beef, then top with the reserved avocado, cheese, lettuce, tomato and a dollop of sour cream. Enjoy!
