These cookies are said to be very popular among our neighbors to the south, certainly in the Wyoming area, where we love eating them all the time.

* Ingredients :

°1 cup sweetened shredded coconut
°3/4 cup chopped pecans
°1 cup soft butter
°1 cup packed brown sugar
°1/2 cup sugar
°2 large eggs at room temperature
°1 ½ tsp. 1 teaspoon vanilla extract
°2 cups all-purpose flour
°1 c. baking soda
°1/2 tsp. salt
°2 cups oatmeal
°2 cups of chocolate chips (12 ounces)

* Preparation :

Place the coconut and walnuts on a 38x25x3 cm baking tray. Roast in a 350°F (180°C) oven for 6 to 8 minutes, or until golden brown, stirring every 2 minutes. Reserve and let it cool down.

In  bowl, beat butter with sugar to light also fluffy. Adding eggs & vanilla.Mix flour with baking soda and salt. Adding it to cream mix, and mix well. Add oatmeal, chocolate chips, coconut, and toasted pecans.

Spread it with small spoons on the buttered cookie sheets. Bake at 175°C (350°F) for about 12 minutes, or until cookies are golden. Cool on wire racks.
