Zucchini Patties


• 2 cups grated zucchini
• 2 eggs, beaten
• ¼ cup chopped onion
• ½ c flour
• ½ cup grated Parmesan cheese
• ½ cup shredded Mozzarella cheese
• salt to taste
• 2 Tablespoons vegetable oil

1. In a medium bowl, integrate the zucchini, eggs, onion, flour, Parmesan cheese, Mozzarella cheese, and salt. Stir properly sufficient to distribute ingredients evenly.
2. Heat a small quantity of oil in a skillet over medium-excessive heat. Drop zucchini aggregate through heaping Tablespoonfuls after which flatten down with a spatula to shape a patty form and cook for a couple of minutes on every facet till golden.
