Chicken & dumplings


°3-4 cups cooked chicken I use roast chicken
°2 c chicken broth
°¼ c unsalted butter
°1 c flour
°1¼ teaspoon baking powder
°¼ t salt
°1 c milk
°1 can (10.75 oz) cream of chicken


Preheat oven 400ºF.
Melt the butter in the microwave and pour into the bottom of a 9×13 pan. Shred the chicken and spread it over the butter.
Whisk together the milk and flour, baking powder and salt. Slowly pour over the chicken. Do not stir.
Whisk together the chicken broth and cream of chicken. Pour the soup over the flour and milk mixture. Do not stir.
Bake uncovered for 35 to 45 minutes, or until meatballs are golden brown.
